Cheesy Pasta Risotto



Happy New Year… parties completed? I do have my husband's birthday in 2 weeks but it is not a "big number" like last year. I promise I will get back to my regularly scheduled program next week, but yes, I'm doing it again, combining French Friday's with Dorie, with Foodie Friday, sorry Dorista's and Foodista you have to meet again. Now on to this week's recipe. I would call this "pasta pilaf" more than I would call it "pasta risotto". When you make a risotto you slowly stir in liquid, and it is gradually absorbed by the rice. When you make a pilaf, you put all the liquid in at once and stir it regularly; letting the rice absorb it. This is exactly what you do with this recipe.
The pasta is not pre-cooked and added to the sauce. In this recipe the pasta is cooked in the chicken broth, so it completely absorbs the broth and it's flavor. I've used this technique before with Asian noodle dishes, but never with a Mediterranean dish, even though I have seen it before.
The result was a really rich and flavorful side dish. The basic recipe calls for adding just onions, but I had peas and mushrooms, and decided to add them, so I wouldn't have to make a vegetable dish too. Yes, I am feeling a bit tired and lazy. I served this pasta with a lemony breaded chicken. I recommend serving it with a bright citrus dish to counter the rich creaminess of the dish.
The recipe is actually very simple to follow, but I would not recommend salting your vegetables. I would not add any salt into this dish until after you have tasted it. The chicken broth and parmesan for me provided enough salt. Definitely go heavy on the pepper.. it tastes delicious.
