I paired the tilapia with a classic Mediterranean side dish Italian Zucchini Saute. Even my daughter who can be a little picky about fish gobbled it up. The cheese and breading really made it appealing to her, and my son who loves fish ate two pieces.


Italian Zucchini Saute:

Ingredients: 4 small zucchini halved and sliced thinly 1 onion halved and sliced thinly 1/4 cup of Tomato sauce (great way to use leftover sauce) 1 teaspoon Italian Seasoning Mix 1 tablespoon of Extra-Virgin Olive Oil (EVOO) salt and pepper to taste

Directions: 1) In a medium size skillet saute the onions in EVOO add the zucchini after about a minute along with the Italian seasoning, salt and pepper. Cook until onions wilt and zucchini begins to brown.
2) Add tomato sauce mix well and heat through.
